ABOUT THE COURSE
The Level 2 Award in Food Safety in Catering (outdoors) has been designed to address the food safety needs of the catering and hospitality sector but adding the additions of cooking outdoors! The qualification is designed to give an appreciation of good hygiene practice.
On this food safety and hygiene course, there is an emphasis on the 4 Cs (chilling, cooking, cleaning, contamination). Monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system. It is aimed at those of you who perform a varied food handler’s role with some guidance and supervision.
The course is accredited by Qualsafe. A multiple - choice test will conclude at the end of the course. After successful completion candidates will receive a certificate from Qualsafe plus a ‘Blake Training’ certificate, personalising the additional outdoor food safety topics covered.
THE COURSE WILL GIVE PARTICIPANTS
The aim of the day is to combine the theory of food safety and hygiene with the practical skills of cooking lunch in the outdoors developing good practice guidelines in hopefully a fun, interactive manner.

For Forest School Leaders, Children's workers, Scout and Guide leaders, voluntary helpers and anyone preparing food for others in an outdoor setting.

ABOUT THE TUTOR
The training is run by Sarah Blake who initially established this course with Lantra Awards, but now delivers this using the nationally recognised level two qualification. Sarah has been carrying out food safety training and related subjects since 1988. Other areas of employment have been in the food Industry, the inspection of food premises, food laboratory work and in teaching Food Technology. Sarah has been involved in catering throughout her life, and in latter years running a conference centre and now with offering food for the training centre. www.blaketraining.co.uk
